The process begins with the extraction of cocoa from the cacao bean. To do this, you need to harvest the cocoa pods. The pods are then crushed to make pulp. After separating the pulp and the residue, you then ferment the pulp. This process takes about six days in the natural world. Fermenting is done in two major ways; it can either in open heaps or boxes.
Once fermented, the beans are graded according to their quality. This is then followed by roasting. The time and nature of roasting highly depend on the size and quality of the beans. Roasting is an essential process as it determines the kind of chocolate that you will end up with both tastes and look. While roasting, some manufacturers like incorporating nibs to enhance the flavor of the chocolate. This is however discouraged against as nibs contain a high-fat content of what is commonly referred to as cocoa butter.
A lot of people usually wonder whether white chocolate is chocolate at all. To answer this question, it is good to understand how it is made then make conclusions out of that.
White Chocolate Making Process
The creation of white chocolate is similar to that of dark chocolate. The only notable difference is that in creating the dark chocolate, there us the use of chocolate liquor while this is not the case with white chocolate. Instead, manufacturers use butter, milk solids, lecithin and vanilla to complete the recipe.
Other manufacturers also substitute some of the above ingredients with vegetable oil. Bear in mind though that vegetable oils should not be used because it alters the way the white chocolate tastes. With the first bite, one can be able to tell if the ingredients have been changed. The taste of a pure bar of white chocolate is vanilla and cream. Anything other than the two should be an indication that the ingredients have been altered.
Therefore, from the process, it is evident that the dark chocolate is not all that different from the white one, only that there is a slight tweak in the recipe. However, to some who believe in dark chocolate alone, the difference is huge enough to disqualify white chocolate from being called chocolate.
